Thinking about barrels, Pinot Noir and bottling…

the 2009 sandihurst pinot noir Busy time of year this. Not only is the 2010 harvest in full swing, it is also the time to start assembling the 2009 Pinot Noirs. Bottling date is scheduled for around 4 weeks time so I need to start sniffing, swirling and spitting my way through all of the barrels to get and idea about the final blend of each wine. Also I will be needing to get a fairly comprehensive lab check done too in order to make a call on whether to fine or filter the wines. Hopefully it will be neither. The lab report will tell me if there is any residual sugar still in the wine, whether the malolactic ferment is complete, the level of bacteria, volatile acidity, alcohol and acid too. The timing has to be spot on too because as soon as I have emptied the barrels of the 09 wine it will hopefully be time to rack down the 2010 batch. The best thing for a barrels health is to be full all the time.
